Take Out Selections

Mannicotti & Cannelloni ............is one of the oldest shapes of pasta that is still prepared today much like it was originally made. In ancient times, pasta dough was prepared, cut into large rectangles, filled with flavorful stuffing's, then rolled and baked in the oven.  This elegant shaped pasta is typically stuffed with a cheese mixture and baked in flavorful sauces.  The one thing you have to remember is to make sure that the sauce you pour over the Manicotti or Cannelloni (once you have arranged them in the baking dish) is somewhat more liquid than what you would normally use for pasta, because it will thicken in the oven.
Easy Bake Instructions: Cover the dish with foil and bake at 350 degrees for 35 to 40 minutes or until thoroughly heated

Chicken Braciole
Fresh chicken breast filled with garlic, parsley, Parmesan cheese, capers, butter and Prosciutto di Parma.
Place meat and sauce in an ovenproof container and cover it. Heat oven to 350 F and warm for 20 Minutes.
To Serve:
Slice the Braciole into 1 inch slices, cover with sauce. Surround with vegetables and potato or rice.

 

Pork Loin wrapped with Pancetta.
Pork loin wrapped with Italian pancetta, fresh rosemary, garlic, thyme..
Place meat and sauce in an ovenproof container and cover it. Heat oven to 350 F and warm for 30 Minutes. (Can be sliced cold for sandwiches - Fall/Winter item)).
To Serve: Slice the Porchetta into 1 inch slices, cover with sauce. Surround with vegetables and potato.    

 

Chicken Scallopine

Chicken is pounded, floured and sautéed in olive oil and butter.  I make the picatta with olive oil, butter, green cerignola olives, capers in balsamic, garlic, lemons, parsley and white wine.  Serve the chicken over sautéed spinach and enjoy!

3 meats ( ground pork, ground veal, ground sirloin)
3 cheeses ( ricotta, mozzarella, Parmesan)
Topped with fresh Parmesan cheese.

Vegetable Lasagna "for Two"
Baby Spinach, Tomato and Baby Eggplant
3 cheeses ( ricotta, mozzarella, Parmesan)
Topped with fresh Parmesan cheese.
